No-Bake Blueberry Chia Seed Pie

A light and fruity no-bake pie that combines the vibrant sweetness of blueberries with the unique texture of chia seeds.

  • 2 cups fresh blueberries
  • 1/4 cup chia seeds
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup yogurt (optional for creaminess)
  • 1 pre-made graham cracker or almond flour crust

Instructions

  1. Prepare the Crust: If you’re using a pre-made graham cracker crust, just take it out of the package and set it aside. If you’re making your own, crush about 1 1/2 cups of graham crackers (or almond flour) and mix them with 5 tablespoons of melted butter. Press the mixture into a pie pan and refrigerate to set while we work on the filling.
  2. Mix the Blueberries and Sweetener: In a medium saucepan over medium heat, combine your fresh blueberries and honey (or maple syrup). Cook for about 5 minutes until the blueberries have released their juices and the mixture is slightly syrupy. Use a fork or potato masher to gently break down some of the berries but leave some whole for texture.
  3. Add Chia Seeds and Vanilla: Remove the saucepan from heat, and stir in the chia seeds and vanilla extract. Mix well, ensuring the chia seeds are evenly distributed.
  4. Combine with Yogurt (Optional): If you’re using yogurt for creaminess, now’s the time! In a separate bowl, mix your yogurt with a bit of the blueberry mixture to temper it, then fold it gently back into the rest of the filling.
  5. Assemble the Pie: Pour the filling into your prepared crust and smooth the top with a spatula. If you’re feeling fancy, you can also arrange some whole blueberries on top for a beautiful presentation.
  6. Chill the Pie: Cover the pie and refrigerate it for at least 240 minutes, preferably overnight. This chill time allows the mixture to firm up nicely.

Notes

Garnish with whipped cream or mint leaves before serving. This pie actually tastes better when it sits overnight in the fridge.
