  • 1 cup rolled oats
  • 1 cup brown sugar
  • 1/2 cup coconut oil or vegan butter, melted
  • 1 teaspoon cinnamon

  • 1/2 teaspoon salt
  • 1 cup almond milk or other plant-based milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the peaches by tossing them with 1/2 cup brown sugar and a pinch of cinnamon, letting them sit for about 10 minutes.
  3. Mix the dry ingredients in a separate bowl: flour, oats, remaining brown sugar, baking powder, cinnamon, and salt.
  4. Combine the melted coconut oil, almond milk, and vanilla in another bowl.
  5. Bring the wet ingredients into the dry mixture and stir until just combined.
  6. Layer the peach mixture in a baking dish and spread the cobbler batter over the top.
