Vegan Green Goddess Salad

A vibrant and fresh Vegan Green Goddess Salad filled with nutrient-rich greens, crunchy veggies, and a creamy herbal dressing.

Ingredients

  • 2 cups chopped kale
  • 2 cups shredded cabbage
  • 1 medium cucumber, sliced
  • 1 can chickpeas, drained and rinsed
  • 1 cup mixed fresh herbs (parsley, chives, dill)
  • 3 tablespoons olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Prep your greens: Wash the kale and cabbage thoroughly, chop the kale, and slice the cabbage thinly.
  2. Massage the kale lightly for a few minutes to soften it.
  3. Chop the cucumber into half-moons or dice it.
  4. Rinse the chickpeas under cold water to ensure a cleaner flavor.
  5. Grab the fresh herbs and give them a rough chop, about a cup total.
  6. Make the dressing by combining olive oil, lemon juice, garlic, salt, and pepper in a small bowl.
  7. Combine the kale, cabbage, cucumber, chickpeas, and chopped herbs in a large bowl.
  8. Drizzle with the dressing and toss gently to coat.
  9. Taste and adjust seasoning as needed.

Notes

For a creamier dressing, blend in a ripe avocado or add a dollop of vegan yogurt. You can prep ingredients ahead and add the dressing just before serving.
