Turkey Pesto Sandwich

A crave-worthy Turkey Pesto Sandwich made with tender turkey, creamy provolone, and vibrant homemade pesto in crispy ciabatta bread.

Ingredients

  • Deli-style turkey breast
  • Homemade or store-bought pesto
  • Provolone cheese
  • Ciabatta bread
  • Olive oil (for grilling)

Instructions

  1. Combine ingredients for the pesto: In a food processor, combine 2 cups of fresh basil leaves, 3 cloves of garlic, a handful of pine nuts, and ½ cup of grated Parmesan cheese. Pulse until finely chopped.
  2. Add olive oil: With the processor running, gradually add ½ cup of extra-virgin olive oil until smooth.
  3. Season with salt and pepper to taste, and store in the fridge.
  4. Slice the ciabatta bread open like a book.
  5. Spread pesto generously on the inside of both slices of bread.
  6. Layer slices of turkey breast on one half of the ciabatta.
  7. Add a slice or two of provolone cheese on top.
  8. Heat a skillet or panini press over medium heat, adding a tablespoon of olive oil for crispiness.
  9. Grill the sandwich for 3-4 minutes on each side until the cheese is melty and the bread is golden brown.
  10. Remove from heat, let cool for a minute, then cut in half diagonally.
  11. Serve with a side of crispy chips or a fresh salad.

Notes

Add arugula or mixed greens for color and drizzle with balsamic glaze. Try adding grilled veggies or jalapeños for extra flavor.
