Turkey Meatball Soup

A comforting Turkey Meatball Soup filled with flavorful meatballs and vibrant vegetables, perfect for cozy nights.

Ingredients

  • 1 pound Ground turkey
  • ½ cup Breadcrumbs
  • 1 Egg
  • 2 cloves Minced garlic
  • 1 cup Carrots, chopped
  • 1 cup Celery, chopped
  • 1 cup Peas
  • 6 cups Chicken or vegetable broth
  • Salt to taste
  • Pepper to taste
  • Fresh thyme or parsley (as desired)
  • Olive oil (for searing)

Instructions

  1. Combine ground turkey, breadcrumbs, egg, minced garlic, and herbs in a large mixing bowl.
  2. Roll the mixture into 1 tablespoon-sized meatballs.
  3. Sear the meatballs in a pot with olive oil for 3-4 minutes until golden brown.
  4. Remove meatballs and sauté chopped carrots, celery, and peas in the same pot for about 5 minutes.
  5. Add broth, salt, pepper, and any dried herbs, then return the meatballs to the pot.
  6. Simmer for about 20 minutes on low heat.
  7. Taste and adjust seasoning before serving.

Notes

For added flavor, consider a splash of lemon juice before serving. Serve with crusty bread or a light salad.
