Ingredients

  • Watermelon (about 4 cups, cubed)
  • Feta Cheese (1 cup, crumbled)
  • Cucumber (1 medium, diced)
  • Red Onion (1/4 small, thinly sliced)
  • Fresh Mint (1/4 cup, chopped)
  • Olive Oil (2 tablespoons)
  • Lemon Juice (2 tablespoons, freshly squeezed)
  • Salt and Pepper (to taste)

Instructions

  1. Prepare the Watermelon: Cut your watermelon into bite-sized cubes.
  2. Dice the Cucumber: Wash and chop your cucumber into small pieces.
  3. Slice the Red Onion: Thinly slice it for manageable pieces in the salad.
  4. Chop the Mint: Stack and slice the mint leaves finely.
  5. Mix Everything Together: In a large bowl, combine watermelon, cucumber, red onion, and mint. Drizzle with olive oil and lemon juice.
  6. Add the Feta: Sprinkle crumbled feta on top and gently fold it into the salad.
