Strawberry Cream Cheese Muffins with Streusel Topping

Deliciously soft and fluffy muffins loaded with strawberries and cream cheese, topped with a crunchy streusel for the perfect breakfast treat.

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cream cheese, softened
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk
  • 1 cup fresh strawberries, chopped
  • 1/2 teaspoon vanilla extract
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1/4 cup butter, softened for topping
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 12-cup muffin tin with paper liners or grease lightly.
  3. Mix the dry ingredients: flour, sugar, baking powder, and salt in a bowl.
  4. Cream the butter and cream cheese until fluffy in another bowl.
  5. Add eggs one at a time, and stir in vanilla extract.
  6. Combine the dry and wet mixtures while alternating with milk.
  7. Fold in the chopped strawberries gently.
  8. Prepare the streusel: mix brown sugar, oats, cinnamon, and softened butter until crumbly.
  9. Fill the muffin cups about 2/3 full with batter.
  10. Add the streusel topping generously over each muffin.
  11. Bake for 20-25 minutes or until a toothpick comes out clean.
  12. Cool in the pan for 5 minutes before transferring to a wire rack.

Notes

For a delicious variation, try adding nuts or chocolate chips, or substitute strawberries with other berries.
