Steak Grain Bowl

A hearty and wholesome dish featuring juicy steak, nutty farro, and colorful roasted vegetables, perfect for sharing with friends and family.

Ingredients

  • Steak (8 oz), ribeye or sirloin preferred
  • Farro (1 cup), or quinoa/brown rice as a substitute
  • Roasted Vegetables (2 cups), such as bell peppers, zucchini, sweet potatoes, or Brussels sprouts
  • Olive Oil (2 tbsp), can substitute with avocado oil or melted butter
  • Garlic (2 cloves, minced), or 1/2 teaspoon garlic powder
  • Salt and Pepper, to taste
  • Fresh Herbs (for garnish), like parsley or cilantro

Instructions

  1. Cook the Farro: Rinse farro under cold water, then combine with 3 cups of water and a pinch of salt. Bring to a boil, lower heat, and simmer for about 25-30 minutes. Drain excess water and set aside.
  2. Prep the Vegetables: Chop vegetables into bite-sized pieces, toss with olive oil, garlic, salt, and pepper, then spread on a baking sheet and roast at 425°F (220°C) for 20-25 minutes.
  3. Cook the Steak: Season with salt and pepper, sear in a hot skillet for 4-5 minutes each side for medium-rare. Let rest for 5-10 minutes before slicing.
  4. Assemble the Bowl: Layer farro, roasted vegetables, and sliced steak in a bowl. Garnish with fresh herbs and a drizzle of olive oil.
