Pineapple Chicken Kabobs

  • 2 lbs chicken breast, cut into 1-inch cubes
  • 2 cups pineapple chunks
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 large red onion, cut into 1-inch pieces
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1/4 cup pineapple juice
  • Coconut rice, for serving

Instructions

  1. Marinate the chicken: In a large bowl, combine soy sauce, brown sugar, minced garlic, ginger, and pineapple juice. Add chicken and toss to coat. Cover and marinate for at least 30 minutes.
  2. Prep the vegetables: Cut bell peppers and onions into 1-inch pieces. Soak wooden skewers in water for 30 minutes.
  3. Assemble the kabobs: Thread chicken, pineapple, bell peppers, and onion onto skewers, alternating ingredients.
  4. Grill the kabobs: Preheat grill to medium-high. Grill kabobs for 10-12 minutes, turning occasionally until the chicken reaches an internal temperature of 165°F (75°C).
  5. Serve with coconut rice and garnish with fresh cilantro or lime if desired.

Notes

For extra flavor, brush kabobs with leftover marinade in the last few minutes of grilling. Allow for some space between ingredients on skewers for even cooking.
