Instructions

  1. Prep the peaches: Wash and chop them into small, bite-sized pieces.
  2. Mix the dry ingredients: In a bowl, combine flour, sugar, baking powder, and salt.
  3. Combine wet ingredients: Whisk together milk, egg, and vanilla extract until blended.
  4. Combine wet and dry: Gradually add the wet mixture to the dry ingredients, stirring until just combined.
  5. Fold in the peaches: Gently incorporate diced peaches into the batter.
  6. Heat the oil: Pour oil for deep frying into a skillet and heat to 350°F (175°C).
  7. Fry the fritters: Drop spoonfuls of batter into the hot oil and fry for 2-3 minutes per side until golden brown.
  8. Drain and dust: Remove fritters and place them on paper towels; dust with powdered sugar.
  9. Serve immediately: Enjoy warm with ice cream or whipped cream.
