Peach Crumb Bars

Delightful peach crumb bars with a buttery crust and crumbly topping, perfect for summer gatherings.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 170 g unsalted butter (about 3/4 cup), softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 3 cups diced peaches (fresh or frozen)
  • 2 tbsp cornstarch
  • 1/4 cup sugar
  • 1 tbsp lemon juice
  • 1/2 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13 inch baking dish by greasing it or lining with parchment paper.
  3. Combine flour, granulated sugar, brown sugar, baking powder, and salt in a mixing bowl.
  4. Mix in softened butter until it resembles coarse crumbs.
  5. Add the egg and vanilla extract; mix until combined.
  6. Divide about 1 ½ cups of the mixture and set aside; press the rest into the bottom of the prepared pan.
  7. Prepare the peach filling by tossing peaches with cornstarch, sugar, lemon juice, and cinnamon.
  8. Pour the peach mixture over the crust and spread evenly.
  9. Crumble the reserved mixture on top of the peach filling.
  10. Bake for 35–40 minutes until golden brown and bubbly.
  11. Cool for at least 15 minutes before slicing.

Notes

Serve warm with vanilla ice cream and drizzle with caramel sauce for extra indulgence.
