Creamy Spinach Tomato Tortellini

A creamy and savory tortellini dish bursting with fresh flavors of spinach and tangy tomatoes, perfect for dinner parties or cozy weeknights.

Ingredients

  • Fresh Tortellini (cheese-filled recommended)
  • Tomato Sauce (canned or homemade)
  • Heavy Cream
  • Fresh Spinach
  • Garlic (minced)
  • Olive Oil
  • Salt and Pepper (to taste)
  • Parmesan Cheese (freshly grated)

Instructions

  1. Cook the Tortellini: Boil salted water and cook tortellini according to package instructions until al dente, about 3-5 minutes. Drain, reserving some cooking water.
  2. Sauté the Garlic: Heat olive oil in a skillet over medium heat, add minced garlic, and sauté for 30 seconds until fragrant.
  3. Add Spinach: Toss in fresh spinach and cook until wilted, about 2 minutes; if using frozen, ensure it’s thawed and broken apart.
  4. Pour in Tomato Sauce and Cream: Add tomato sauce, stir for a minute, then add heavy cream. Let simmer for about 5 minutes.
  5. Combine: Mix in the cooked tortellini, season with salt and pepper, and stir until well coated in sauce.
  6. Cheese Time: Stir in freshly grated parmesan until melted and creamy.

Notes

Serve topped with extra parmesan and black pepper, and enjoy with garlic bread and a salad.
