Wholesome Chicken Noodle Soup

  • 2 boneless chicken breasts or thighs
  • 2 cups egg noodles (or any pasta)
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 bay leaves
  • 6 cups chicken broth
  • Salt and pepper to taste
  • Fresh parsley or dill, for garnish

Instructions

  1. Prep your ingredients by chopping your celery and carrots into bite-sized pieces.
  2. Sauté the veggies in a large pot with olive oil over medium heat for about 5 minutes until softened.
  3. Add minced garlic and bay leaves, sautéing for an additional minute until fragrant.
  4. Pour in chicken broth and add chicken pieces; season with salt and pepper. Bring to a boil, then reduce to a simmer for 15-20 minutes.
  5. Shred the chicken once cooked, returning it to the pot.
  6. Add your noodles and cook according to package instructions, about 7-10 minutes.
  7. Finish with fresh herbs and a squeeze of lemon juice for added flavor.
