Savory Stuffed Bell Peppers

  • 4 large bell peppers (various colors)
  • 1 lb Italian sausage (or turkey/chicken for lighter option)
  • 2 cups cooked rice (white or brown)
  • 1 cup shredded mozzarella or cheddar cheese
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Red pepper flakes (optional, for heat)
  • 1/2 cup water (for baking)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the bell peppers by slicing off the tops and removing seeds and membranes.
  3. Blanch the peppers in boiling water for 5-7 minutes if desired.
  4. Cook the sausage in a skillet over medium heat, breaking it apart as it browns.
  5. Mix in the cooked rice and seasonings, tasting to adjust as needed.
  6. Add about a cup of shredded cheese into the mixture, reserving some for topping.
  7. Stuff the peppers with the sausage mixture, packing them gently.
  8. Top the stuffed peppers with reserved cheese.
  9. Bake with water in the dish covered with foil for 25-30 minutes, then remove foil and bake for an additional 10-15 minutes.
  10. Cool for a few minutes before serving.

Notes

Feel free to swap ingredients based on dietary preferences. For a vegetarian version, use lentils or a meat substitute instead of sausage.
