Andy’s Homemade Mexican Rice

A flavorful and fluffy Mexican rice recipe that elevates any meal with savory garlic and zesty tomato notes.

  • 2 cups long grain white rice
  • 2 tablespoons butter
  • 1 tablespoon minced garlic
  • 4 cups water
  • 2 tablespoons tomato paste
  • 1 tablespoon Knorr Chicken Bouillon Powder

Instructions

  1. Rinse the rice under cold water for about 3-4 minutes until it runs clear.
  2. Melt the butter in a large pot over medium heat.
  3. Sauté the minced garlic for about a minute until fragrant.
  4. Toast the rinsed rice in the pot for about 3-4 minutes until slightly golden.
  5. Add 4 cups of water, tomato paste, and Knorr chicken bouillon to the pot.
  6. Bring the mixture to a boil, then reduce heat, cover, and simmer for 18-20 minutes.
  7. Let the rice rest for 5 minutes off the heat.
  8. Fluff the rice gently with a fork and serve hot.

Notes

Taste as you go and adjust seasonings if needed. For added flavor, consider mixing in chopped cilantro before serving.
