Chicken Wild Rice Bowl

A cozy and hearty Chicken Wild Rice Bowl filled with tender chicken, nutty wild rice, sautéed mushrooms, and vibrant spinach, topped with a delicious sauce.

  • 1 lb Chicken Breast
  • 1 cup Wild Rice
  • 8 oz Mushrooms (sliced)
  • 2 cups Fresh Spinach
  • 2 tablespoons Olive Oil
  • 1 teaspoon Garlic Powder
  • Salt and Pepper to Taste
  • Optional Sauce: Soy Sauce or Teriyaki Sauce

Instructions

  1. Cook the Wild Rice: Rinse the wild rice under cold water. In a saucepan, combine with 2 ½ cups of water, add salt, and bring to a boil. Reduce heat, cover, and simmer for about 45 minutes until the grains burst open.
  2. Prep the Chicken: Pat the chicken breasts dry and season with salt, pepper, and garlic powder. Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
  3. Sear the Chicken: Place the chicken in the skillet and cook for about 6-7 minutes on each side until browned and cooked through. Remove and let rest.
  4. Sauté the Mushrooms: In the same skillet, add sliced mushrooms and sauté for about 5 minutes until browned and tender.
  5. Add Spinach: Toss in fresh spinach and stir until wilted, about 2-3 minutes.
  6. Combine Everything: Slice the chicken and mix the cooked wild rice with mushrooms and spinach. Drizzle sauce if desired and toss to combine.
  7. Plate and Serve: Dish into bowls, arranging sliced chicken on top and adding extra sauce or garnishes if desired.
