Blueberry Cobbler

A delightful Blueberry Cobbler recipe that captures the essence of summer with fresh blueberries and a buttery crust.

  • 12 tablespoons unsalted butter, divided
  • 1 ½ cups granulated sugar, divided, plus 2 tablespoons for sprinkling on top
  • 2 teaspoons lemon zest
  • 3 cups blueberries
  • 1 ½ cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • ¾ teaspoon salt
  • 1 ½ cups milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13 inch baking dish by greasing it with 4 tablespoons of unsalted butter.
  3. Melt the remaining 8 tablespoons of butter in a small saucepan over low heat.
  4. Mix the flour, 1 cup of sugar, baking powder, and salt in a large bowl.
  5. Combine the milk, vanilla extract, and lemon zest in another bowl, then whisk in the melted butter.
  6. Incorporate the wet mixture into the dry ingredients until just combined.
  7. Add the blueberries and gently fold them into the batter.
  8. Assemble the batter in the prepared baking dish and sprinkle with the remaining sugar.
  9. Bake for 45-55 minutes until golden brown.
  10. Cool for 15 minutes before serving warm.
