Strawberry Lemon Blondies

Delightfully soft and buttery blondies infused with juicy strawberries and a zing of fresh lemon.

  • 1 cup unsalted butter, softened
  • 1 1/2 cups sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh strawberries, chopped
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • Additional strawberries for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13 inch baking pan by greasing it with non-stick spray or lining it with parchment paper.
  3. Cream together the softened unsalted butter and sugar in a large mixing bowl until light and fluffy, about 3-4 minutes.
  4. Add the eggs, one at a time, mixing well after each addition.
  5. Mix together the flour, baking powder, and salt in a separate bowl, and gradually stir this mixture into the wet mixture until just combined.
  6. Fold in the chopped strawberries, lemon zest, and lemon juice gently.
  7. Pour the batter into the prepared baking pan, spreading it evenly.
  8. Bake for about 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
  10. Whisk together powdered sugar and milk for a drizzle, adjusting the consistency as necessary.
  11. Drizzle over cooled blondies and cut into squares, topping with additional strawberries if desired.

Notes

These blondies can be served warm or at room temperature, and pair beautifully with whipped cream or ice cream. Store in an airtight container at room temperature for up to 3 days.
