  • 1/2 cup cold butter, cubed
  • 1/2 cup buttermilk
  • 1 large egg
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup poppy seeds

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix the flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
  3. Cut the cold, cubed butter into the flour mixture until it resembles coarse crumbs.
  4. Combine the buttermilk, egg, lemon juice, and lemon zest in a small bowl, then whisk.
  5. Pour the wet mixture into the flour and butter mixture, gently folding in the poppy seeds.
  6. Shape the dough on a lightly floured surface, patting it into a rectangle about 1-inch thick, then cut into triangles.
  7. Bake for 15-18 minutes until lightly golden on top.
  8. Cool on a wire rack before enjoying.

Notes

For a dairy-free option, substitute cold butter with vegan butter and buttermilk with a mixture of milk and vinegar.
