Lemon Herb Greek Chicken Bowls

  • 1 lemon, juiced
  • 3 tablespoons olive oil
  • 3 cloves fresh garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt

  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • ½ cup feta cheese, crumbled
  • Fresh parsley, for garnish
  • 1 cup Greek yogurt (for tzatziki)
  • ½ cucumber, diced (for tzatziki)
  • 1 clove fresh garlic, minced (for tzatziki)
  • 1 tablespoon lemon juice (for tzatziki)
  • 1 tablespoon fresh dill (or mint) (for tzatziki)

Instructions

  1. Marinate the Chicken: In a medium bowl, combine the juice of 1 lemon, 3 tablespoons of olive oil, 3 minced garlic cloves, 1 tablespoon of dried oregano, 1 teaspoon of salt, and ½ teaspoon of black pepper. Whisk until blended. Add 1 pound of chicken breasts to the marinade, ensuring they’re well-coated. Cover and refrigerate for at least 30 minutes.
  2. Preheat your grill or skillet over medium-high heat. Add the marinated chicken, cooking for about 6-7 minutes on each side until golden brown and fully cooked. Let it rest for 5 minutes before slicing.
  3. Prepare the Veggies: While the chicken is cooking, dice your cucumbers, chop the tomatoes, and thinly slice the red onion. Toss them together in a bowl and season lightly with salt, pepper, and a drizzle of olive oil.
  4. Make the Tzatziki Sauce: In a small bowl, combine 1 cup of Greek yogurt, ½ diced cucumber, 1 minced garlic clove, 1 tablespoon of lemon juice, and 1 tablespoon of chopped fresh dill. Mix until well-combined and refrigerate until serving.
  5. Assemble Your Bowls: In a serving bowl, layer ½ cup of cooked rice or quinoa, followed by a portion of the cucumber-tomato mixture. Top with sliced grilled chicken, crumbled feta, a dollop of tzatziki, and a sprinkle of fresh parsley.
