Lemon Herb Couscous

A vibrant and zesty dish combining pearl couscous with fresh herbs and lemon juice, perfect as a side or light main meal.

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 tablespoon minced garlic
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 cup pearl couscous
  • 1½ cup vegetable broth (low sodium)
  • ½ cup chopped fresh herbs (basil and cilantro)
  • ½ lemon, zested and juiced
  • ½ tablespoon olive oil (optional)

Instructions

  1. Heat the olive oil in a medium saucepan over medium heat. Add the diced onion and cook for about 3-4 minutes until soft and translucent.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Sprinkle in the salt and pepper, stirring to combine.
  4. Stir in the pearl couscous, cooking for 1-2 minutes until toasted.
  5. Pour in the broth and bring to a gentle boil. Reduce heat to low, cover, and let simmer for about 10-12 minutes.
  6. Fluff the couscous with a fork, then add lemon zest, lemon juice, and chopped herbs. Stir gently to combine.
  7. Optional: Drizzle with olive oil before serving.
  8. Serve warm and enjoy!
