Heavenly Kentucky Butter Cake Cookies

Delightful cookies with a rich, buttery flavor and a soft, melting interior, inspired by traditional Kentucky butter cake.

  • 2 ½ cups (310 grams) all-purpose flour
  • 2 large eggs
  • 1 cup (225 grams / 8 oz) unsalted butter, softened
  • 1 cup (200 grams) granulated sugar
  • ½ cup (100 grams) powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp butter extract (optional)
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup (115 grams / 4 oz) unsalted butter (for the glaze)
  • ¾ cup (150 grams) granulated sugar (for the glaze)
  • ¼ cup (60 mL / 2 fl oz) water
  • 1 tsp vanilla extract (for the glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the flour, baking powder, and salt in a medium bowl.
  3. Cream the softened butter, granulated sugar, and powdered sugar until light and fluffy.
  4. Add the eggs, vanilla extract, and butter extract one at a time.
  5. Combine the wet and dry ingredients on low speed until just combined.
  6. Scoop rounded balls of dough onto a parchment-lined baking sheet.
  7. Bake for 10-12 minutes until edges are lightly golden.
  8. Prepare the glaze by melting the remaining butter and stirring in sugar, water, and vanilla.
  9. Glaze the warm cookies while they are cooling on a wire rack.
  10. Cool completely to set the glaze.

Notes

For variations, try adding chocolate chips, lemon zest, or nuts for different flavors.
