  • 23 tablespoons honey
  • 1 teaspoon lemon zest

  • Pinch of ground black pepper
  • 4 boneless skinless chicken breasts
  • ¼ cup soy sauce
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons garlic (minced)
  • 4 cups romaine lettuce (chopped)
  • 1 ½ cups blueberries
  • 1 cup crumbled Gorgonzola cheese
  • 1 cup slivered almonds
  • 1 cup crumbled bacon
  • ½ cup dried cranberries

Instructions

  1. Marinate the Chicken: In a bowl, mix the yogurt, yellow mustard, Dijon mustard, honey, lemon zest, and lemon juice. Add a pinch of salt and pepper. Toss in the chicken breasts, ensuring they are well-coated. Let them marinate in the fridge for at least 30 minutes.
  2. Prepare the Grill or Pan: If you have a grill, preheat it to medium-high heat. If using a skillet, add a splash of olive oil and heat over medium heat.
  3. Cook the Chicken: Remove the chicken from the marinade, allowing excess to drip off. Grill or sauté for about 6-7 minutes on each side, or until cooked through.
  4. Cool and Slice: Once cooked, transfer the chicken to a plate and let it rest. Slice into strips or cubes.
  5. Build the Salad Base: In a large bowl, toss the chopped romaine lettuce with the blueberries, dried cranberries, and crumbled Gorgonzola cheese.
  6. Add Chicken and Crunch: Sprinkle the sliced chicken on top, then add the slivered almonds and crumbled bacon.
