Honey Lime Grilled Chicken with Mango Salsa

  • 4 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 mango, diced
  • 1/2 red bell pepper, diced
  • 1/4 red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced

Instructions

  1. Marinate the Chicken: In a medium bowl, whisk together honey, lime juice, garlic powder, salt, and black pepper. Place the chicken breasts in a zip-lock bag or shallow dish and pour the marinade over them. Seal and refrigerate for at least 30 minutes.
  2. Prepare the Mango Salsa: In a mixing bowl, combine diced mango, red bell pepper, red onion, cilantro, and lime juice. Toss gently and taste for seasoning.
  3. Grill the Chicken: Preheat your grill to medium-high heat. Remove the chicken from the marinade and grill for 6-7 minutes on each side, until done.
  4. Rest the Chicken: Remove the chicken from the grill and let it rest for 5 minutes.
  5. Serve Up: Slice the chicken and top it with the mango salsa.
