Spooktacular Halloween Rice Bowls

Delicious and festive Halloween Rice Bowls filled with vibrant veggies, hearty proteins, and topped with a zesty Witches’ Brew sauce.

  • 2 cups Rice (white, brown, or cauliflower)
  • 1 lb Chicken (grilled, roasted, or shredded)
  • 3 Bell Peppers (mixed colors)
  • 2 Carrots (shredded or sliced)
  • 1 cup Corn (fresh, frozen, or canned)
  • 1 cup Sour Cream (or Greek yogurt/tahini for dairy-free)
  • 1 tbsp Sriracha
  • 1 tbsp Lime Juice

Instructions

  1. Cook the rice: In a medium pot, add 2 cups of water and 1 cup of rice. Bring to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes until the water is absorbed.
  2. Prep the chicken: Season with salt, pepper, and spices. Grill or bake for 20-25 minutes, then slice or shred.
  3. Sauté the veggies: In a skillet, heat 1 tbsp olive oil over medium heat. Add bell peppers and carrots, sauté for 5-7 minutes until soft.
  4. Add the corn and cook for another 2-3 minutes until heated through.
  5. Assemble the bowl: Start with rice, top with sautéed veggies and chicken, and drizzle with Witches’ Brew sauce.

Notes

Serve in hollowed-out mini pumpkins for added festivity. Adjust the recipe based on available vegetables and personal taste.
