  • 2 tablespoons lime juice
  • 1 tablespoon lime zest
  • 3 tablespoons fresh cilantro (finely diced)
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 ripe avocados (cubed)
  • 1/3 cup cilantro (finely diced)
  • 1/4 cup red onion (diced)
  • 2 tablespoons lime juice
  • 1/2 teaspoon salt
  • 2 cups cooked cilantro lime rice
  • 1 can black beans (drained and rinsed)
  • 1 1/2 cups corn
  • 1/2 cup plain Greek yogurt
  • 2 chipotle peppers in adobo
  • 12 tablespoons adobo sauce
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder

Instructions

  1. Marinate the Chicken: In a medium bowl, combine lime juice, lime zest, 3 tablespoons cilantro, olive oil, honey, paprika, garlic powder, salt, and black pepper. Whisk until blended. Add chicken thighs and coat. Cover and refrigerate for at least 30 minutes.
  2. Cook the Cilantro Lime Rice: Prepare rice by adding lime juice and cilantro after cooking. Fluff and set aside.
  3. Prep the Avocado Mixture: In a small bowl, mix avocados, diced red onion, lime juice, and salt. Set aside.
  4. Cook the Chicken: Heat a skillet over medium-high heat, add olive oil. Sear marinated chicken thighs for about 5-7 minutes on each side until cooked through.
  5. Prepare the Yogurt Sauce: In another bowl, combine Greek yogurt, chipotle peppers, adobo sauce, lime juice, salt, and garlic powder. Mix well.
  6. Assemble Your Bowls: Start with cilantro lime rice, add chicken, black beans, corn, avocado mixture, and drizzle with yogurt sauce.
  7. Garnish and Serve: Sprinkle extra cilantro and serve with lime wedges.

Notes

Feel free to swap chicken thighs for breasts, or add grilled veggies for a vegetarian twist.
