Chickpea Beet Feta Salad

A vibrant and scrumptious salad featuring hearty chickpeas, sweet roasted beets, tangy feta cheese, and a zesty dressing.

  • 1 can chickpeas, rinsed and drained
  • 1 cup cooked beets, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the beets by wrapping them in aluminum foil and roasting them at 400°F (200°C) for 45-60 minutes. Let them cool, peel, and dice.
  2. Rinse the chickpeas under cold water to remove excess sodium.
  3. Chop the cooked beets and finely chop the red onion.
  4. Combine the rinsed chickpeas, diced beets, crumbled feta, and chopped red onion in a large mixing bowl.
  5. Make the dressing by whisking together olive oil, lemon juice, salt, and pepper in a small bowl.
  6. Dress the salad by drizzling the dressing over it and gently tossing to combine.
  7. Garnish the salad with chopped parsley before serving.

Notes

For added flavor, consider using flavored olive oils or adding your favorite herbs.
