Butterscotch Zucchini Bars

Deliciously moist bars combining rich butterscotch flavor and zucchini for a delightful treat.

Ingredients

  • 2 cups grated zucchini
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butterscotch chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×13 inch baking dish or line with parchment paper.
  3. Squeeze the grated zucchini to remove excess moisture.
  4. Mix the melted butter, brown sugar, and granulated sugar in a large bowl.
  5. Incorporate the eggs, beating well after each addition, then stir in the vanilla extract.
  6. Fold in the squeezed zucchini until well combined.
  7. Combine the flour, baking soda, and salt in a separate bowl, then gradually add to the wet mixture.
  8. Fold in the butterscotch chips until evenly distributed.
  9. Pour the batter into the prepared baking dish and spread evenly.
  10. Bake for 25-30 minutes or until a toothpick comes out clean.
  11. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Serve warm for gooey butterscotch goodness, optionally with vanilla ice cream.
