Savory Beet Greens Sauté

A simple yet flavorful sautéed beet greens dish that showcases the vibrant leaves and their earthy taste.

  • 1 bunch beet greens
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt to taste
  • Black pepper to taste
  • Red pepper flakes (optional)
  • Lemon juice (optional)

Instructions

  1. Wash and dry the beet greens.
  2. Prepare the greens by removing tough stems and chopping into bite-sized pieces.
  3. Heat the olive oil in a large skillet over medium heat.
  4. Sauté the minced garlic for about 30 seconds.
  5. Add the chopped beet greens and stems and cook for 3-5 minutes.
  6. Sprinkle in red pepper flakes if desired.
  7. Finish with a squeeze of lemon juice before serving.
  8. Toss everything together and serve warm.
