Apple Walnut Chicken Salad

A delightful blend of juicy chicken, crisp apples, and crunchy walnuts, perfect for lunch or dinner.

  • 2 cups cooked chicken, shredded or diced
  • 1 large apple, diced (like Granny Smith or Honeycrisp)
  • 1/2 cup walnuts, chopped
  • 1/2 cup celery, finely chopped
  • 1/3 cup mayo (or Greek yogurt for a healthier twist)
  • Salt and pepper, to taste

Instructions

  1. Prep Your Chicken: Shred or dice cooked chicken into bite-sized pieces. If raw, poach in simmering water for 15-20 minutes.
  2. Chop It All Up: Dice your apple and celery, and chop the walnuts. Aim for a variety of colors and textures.
  3. Combine Ingredients: In a large bowl, mix chicken, apples, celery, and walnuts until well-distributed.
  4. Dress It Up: Add mayo (or yogurt) and mix gently to coat all ingredients.
  5. Season to Perfection: Sprinkle with salt and pepper, and optionally add lemon juice.
  6. Chill Out: Refrigerate for at least 30 minutes to let flavors mingle.

Notes

Serve on lettuce leaves or with whole-grain crackers. Add avocado for creaminess.
