Maple Dijon Chicken Salad

A flavorful twist on a classic chicken salad featuring juicy grilled chicken, crisp greens, and a homemade Maple Dijon dressing.

  • 4 cups mixed romaine and spinach lettuce
  • 2 honeycrisp apples
  • 1/4 cup Dijon mustard
  • 1/4 cup pure maple syrup
  • 1/4 cup olive oil
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste
  • Lemon juice (for apples)

Instructions

  1. Prep your chicken by flattening it and seasoning with salt and pepper.
  2. Heat a grill or skillet over medium-high heat with olive oil, then cook the chicken for 6-7 minutes on each side.
  3. Make the Maple Dijon dressing by whisking together mustard, maple syrup, olive oil, and apple cider vinegar.
  4. Chop the lettuce into bite-sized pieces and set aside.
  5. Slice the apples thinly and toss with a squeeze of lemon juice.
  6. Assemble the salad in a large bowl by combining lettuce, apple slices, and sliced chicken, then drizzle with dressing.
  7. Taste the salad and adjust with more dressing or seasoning as desired.
