Mediterranean Stuffed Sweet Potato Boats

A delicious and vibrant dish featuring sweet potatoes stuffed with a savory Mediterranean filling.

  • 4 sweet potatoes
  • 1 can chickpeas, drained and rinsed
  • 1 cup feta cheese, crumbled
  • 1 cup mixed chopped veggies (e.g., bell peppers, cherry tomatoes, red onion)
  • 1/4 cup fresh herbs (e.g., parsley, cilantro)
  • Juice of 1 lemon
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the sweet potatoes by cleaning them and poking holes with a fork.
  3. Bake the sweet potatoes for 45–50 minutes, until tender.
  4. Make the filling by combining chickpeas, chopped veggies, feta, olive oil, lemon juice, salt, and pepper in a medium bowl.
  5. Add the fresh herbs to the filling and mix well.
  6. Stuff the baked sweet potatoes with the veggie mixture.
  7. Return the stuffed sweet potatoes to the oven for an optional 10–15 minutes.
