Zesty Mediterranean Salad Dressing

A vibrant and zesty Mediterranean salad dressing that elevates your greens with bright flavors and pantry staples.

  • 6 tablespoons fresh lemon juice (about 34 lemons)
  • 1 tablespoon water
  • 11/2 teaspoons dried oregano
  • 1 garlic clove, peeled and minced
  • 3/4 cup extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Juicing the lemons: Roll the fresh lemons on a countertop to maximize juice yield and juice until you measure out 6 tablespoons. Strain out the seeds.
  2. Mince the garlic: Finely mince the garlic clove.
  3. Combine the ingredients: In a medium bowl, combine lemon juice, water, oregano, and garlic, then whisk.
  4. Emulsify with olive oil: Gradually add the olive oil while whisking vigorously to create an emulsion.
  5. Season: Add salt, black pepper, and red pepper flakes to taste.
  6. Taste and adjust: Adjust flavors as needed by adding more lemon juice or oregano.
  7. Store or serve: Transfer to an airtight container and refrigerate if not using immediately, shaking before serving.

Notes

This dressing can be stored in the refrigerator for up to a week. Shake or stir before serving as it may separate.
