Chicken Enchilada Casserole

A delightful chicken enchilada casserole bursting with cheesy goodness and zesty flavors, perfect for comfort food lovers.

  • 2 cups cooked chicken, shredded (rotisserie or roasted)
  • 8 corn tortillas (or flour, gluten-free if needed)
  • 2 cups enchilada sauce
  • 2 cups shredded cheese blend (cheddar and Monterey Jack)
  • Salt and pepper to taste
  • 1 tsp cumin (optional)
  • Fresh cilantro, for garnish (optional)
  • Sour cream or avocado, for serving (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare your chicken by shredding it if using rotisserie, or seasoning and roasting if making your own.
  3. Mix the enchilada sauce with half of the cheese in a bowl.
  4. Layer a thin layer of the enchilada mixture in a baking dish, then add a layer of tortillas.
  5. Introduce the shredded chicken over the tortillas, followed by another layer of cheese-enchilada mixture. Repeat until all ingredients are used, finishing with tortillas and sauce on top.
  6. Cover the dish with foil and bake for 20 minutes, then remove foil and bake for an additional 10-15 minutes until cheese is bubbly.
  7. Let the casserole cool for 10 minutes before serving.
