Marry Me Chickpeas

A flavorful and creamy chickpea dish that’s sure to impress with its rich taste and comforting texture.

Ingredients

  • 1 tbsp Olive Oil
  • 1 small Yellow Onion (minced)
  • 3 cloves Garlic (minced)
  • 1½ tbsp Tomato Paste
  • ½ cup Sun-Dried Tomatoes
  • 1 tsp Italian Seasoning
  • ½ tsp Red Chili Flakes
  • 1 tsp Salt
  • ¾ cup Vegetable Broth
  • 1 cup Coconut Milk
  • 30 oz Canned Chickpeas (2 cans, drained and rinsed)
  • 1 handful Spinach or Basil (torn)

Instructions

  1. Warm the olive oil in a large skillet over medium heat.
  2. Sauté the minced onion in the hot oil for 3-4 minutes until soft and translucent.
  3. Add the minced garlic and continue to sauté for another minute until fragrant.
  4. Stir in the tomato paste and sun-dried tomatoes, cooking for 2-3 minutes.
  5. Season with Italian seasoning, red chili flakes, and salt; stir well.
  6. Add vegetable broth and coconut milk, bringing to a gentle simmer.
  7. Chickpeas join the skillet, simmer with the sauce for about 10 minutes.
  8. Finishing touches include stirring in the torn spinach or basil until wilted.
  9. Taste and adjust seasoning if necessary.
  10. Serve hot over rice or quinoa, or as a dip with bread.

Notes

This dish can be made ahead of time and stored in the fridge for up to 3 days or frozen for up to 3 months.
