Mango Lemon Bars

A sweet and tangy delight, these Mango Lemon Bars feature a buttery crust topped with a luscious mango-lemon filling, perfect for any occasion.

  • 1 cup granulated sugar
  • 1/4 cup butter, softened
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup fresh lemon juice
  • 1/2 cup mango puree
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease an 8×8-inch baking dish with butter or line it with parchment paper.
  3. Combine the softened butter and granulated sugar in a mixing bowl and beat until fluffy.
  4. Add the flour and salt to the butter-sugar mixture and mix until combined.
  5. Pour the crust mixture into your prepared pan, pressing it evenly into the bottom.
  6. Bake the crust in the preheated oven for about 15 minutes or until lightly golden.
  7. Whisk together the eggs, fresh lemon juice, mango puree, granulated sugar, and baking powder in a separate bowl until smooth.
  8. Remove the crust from the oven and pour the mango-lemon filling over the hot crust.
  9. Return the pan to the oven and bake for another 20-25 minutes until the filling is set around the edges but slightly jiggly in the center.
  10. Let the bars cool to room temperature, then transfer them to the fridge to chill for at least an hour.
  11. Dust the top with powdered sugar before serving. Cut into squares and enjoy!

Notes

These bars are great for making ahead—store them in an airtight container in the fridge for up to a week.
