Mango & Dragon Fruit Chia Pudding

  • 1 cup coconut milk
  • 1 ripe mango, diced
  • 1 ripe dragon fruit, diced
  • Honey or maple syrup to taste (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Combine your ingredients: In a medium mixing bowl, pour in coconut milk, then add chia seeds and whisk together.
  2. Sweeten it up (if you like): Add honey or maple syrup and whisk until combined.
  3. Chill out: Cover the bowl with plastic wrap or transfer to a mason jar and refrigerate for at least 4 hours or overnight.
  4. Prep your fruit: Dice mango and dragon fruit into bite-sized pieces.
  5. Layer it up: Spoon chia pudding into bowls and layer with diced mango and dragon fruit.
  6. Garnish & serve: Top with fresh mint leaves and enjoy!
