Healthy Chicken Salad Wraps

Delicious and nutrient-packed chicken salad wraps filled with creamy dressing, cranberries, and a satisfying crunch.

  • ½ cup plain Greek yogurt
  • ¼ cup mayonnaise
  • 2 teaspoons Dijon mustard
  • 1 teaspoon rice vinegar
  • 1 teaspoon sugar or honey (optional)
  • ½ teaspoon dried tarragon
  • ¼ teaspoon salt
  • Generous pinch celery salt
  • Freshly ground pepper to taste
  • 2 cups chopped cooked chicken
  • 2/3 cup finely diced celery
  • ¼ cup dried cranberries
  • ¼ cup chopped toasted pecans
  • 6 large wraps, soft tortillas, or lavash
  • 3 loosely packed cups shredded lettuce

Instructions

  1. Prepare the Dressing: In a mixing bowl, whisk together the Greek yogurt, mayonnaise, Dijon mustard, rice vinegar, sugar or honey, dried tarragon, salt, celery salt, and black pepper until smooth.
  2. Mix the Chicken Salad: In a large bowl, combine the chopped chicken, diced celery, dried cranberries, and toasted pecans. Mix gently with a spatula.
  3. Combine with Dressing: Pour the dressing over the chicken mixture and fold it in gently until everything is nicely coated.
  4. Build Your Wraps: Lay a tortilla flat, spoon about a cup of the chicken salad mixture into the center, and top with shredded lettuce.
  5. Roll It Up: Fold the sides of the tortilla inward, then roll from the bottom up, tucking it tightly.
  6. Slice and Serve: Slice the wraps diagonally or into pinwheels and serve beautifully on a platter.
