  • 1/2 cup unsalted butter, softened

  • 1 large egg yolk
  • 1/4 cup lemon juice

  • 3 large eggs
  • 1 tablespoon lemon zest

Instructions

  1. Prepare the crust: In a medium bowl, mix together the flour and powdered sugar. Add in the softened butter and salt and use your fingers or a pastry cutter to incorporate until it resembles coarse crumbs.
  2. Add the egg yolk: Introduce the egg yolk into the mixture and blend it in with a fork, adding a tablespoon or two of cold water until the dough comes together.
  3. Chill the dough: Wrap in plastic wrap and let it chill in the refrigerator for about 30 minutes.
  4. Preheat your oven to 350°F (175°C).
  5. Roll out the dough: Once chilled, roll out on a lightly floured surface until roughly 1/4 inch thick. Place it into a 9-inch tart pan, pressing it into the edges and trimming off any excess dough.
  6. Blind bake the crust: Prick the bottom with a fork and bake for about 15 minutes until lightly golden.
  7. Make the filling: Whisk together the granulated sugar, lemon juice, zest, and eggs until smooth. Pour the mixture into the pre-baked crust.
  8. Bake again: Return to the oven for another 20-25 minutes until the filling is set but has a slight wiggle in the center.
  9. Cool and serve: Allow to cool at room temperature for at least an hour before serving.
