Lemon Ricotta Pasta

A fresh and flavorful pasta dish featuring creamy ricotta and zesty lemon, perfect for a quick meal or impressing dinner guests.

  • 8 ounces pasta (spaghetti or fettuccine)
  • 1 cup ricotta cheese
  • 1 lemon (juice and zest)
  • 2 tablespoons olive oil
  • 1 garlic clove (minced)
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Cook the pasta in salted boiling water until al dente (8-10 minutes). Save some pasta water before draining.
  2. Sauté the garlic in olive oil over medium heat for 1-2 minutes until fragrant.
  3. Mix the ricotta cheese, lemon zest, and juice in a large bowl until smooth.
  4. Combine the drained pasta with the ricotta mixture, using reserved pasta water to achieve desired creaminess.
  5. Adjust seasoning with salt, pepper, and more lemon juice to taste.
  6. Finalize with freshly chopped herbs for garnish.

Notes

For added flavor, serve with extra lemon zest and a drizzle of olive oil. Can be made ahead of time and tastes even better the next day.
