Lemon Curd Cookies

A sweet and tangy delight, these Lemon Curd Cookies are soft, buttery treats with a burst of lemon flavor.

  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup lemon curd
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened unsalted butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract to the butter-sugar mix and beat well.
  4. Whisk together the all-purpose flour, baking powder, and salt in another bowl.
  5. Combine the dry ingredients with the wet ingredients, mixing until just combined.
  6. Fold in the lemon curd gently.
  7. Scoop mounds of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until edges are lightly golden.
  9. Cool on the pan for 5 minutes before transferring to wire racks and dusting with powdered sugar.

Notes

For a fun twist, try adding poppy seeds or mix in white chocolate chips.
