Delightful and easy Keto Magic Cookies packed with rich coconut flavor, crunchy nuts, and semi-sweet chocolate chips, perfect for a low-carb lifestyle.

  • 4 Large Egg Yolks
  • 1 Tbsp. (14g) Butter
  • 3 ½ Tbsp. (50g) Coconut Oil
  • 1/3 Cup (50g) Confectioners Swerve
  • 1 Cup (100g) Unsweetened Coconut Flakes
  • Heaping 1/3 Cup (45g) Chopped Pecans
  • Heaping 1/3 Cup (45g) Chopped Walnuts
  • 2/3 Cup (100g) Semi Sweetened Chocolate Chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the wet ingredients: beat the egg yolks, melted butter, and coconut oil until well combined.
  3. Incorporate the sweetener by gradually mixing in the Confectioners Swerve.
  4. Add the unsweetened coconut flakes, chopped pecans, and walnuts, folding them into the mixture.
  5. Fold in the semi-sweet chocolate chips until evenly distributed.
  6. Form the cookies by scooping the dough onto a lined baking sheet, leaving space between each.
  7. Bake for 12-15 minutes until edges are golden brown.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Freeze cookies for up to two months. Enjoy them plain or with sugar-free whipped cream!
