Keto Calzones with Spinach Artichoke Filling

Delicious keto-friendly calzones filled with a creamy spinach and artichoke mixture, perfect for a cozy meal.

  • 1 cup almond flour
  • 1/2 cup mozzarella cheese, shredded
  • 2 oz cream cheese
  • 1 egg
  • 1 cup fresh spinach, chopped
  • 1/2 cup artichoke hearts, chopped
  • 1/2 cup ricotta cheese
  • 1/2 cup parmesan cheese, grated
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Olive oil for brushing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the almond flour, mozzarella cheese, cream cheese, and egg in a medium bowl.
  3. Knead the dough on a lightly floured surface until smooth and elastic.
  4. Mix the spinach, artichokes, ricotta, parmesan, garlic, salt, and pepper in a separate bowl.
  5. Divide the dough into 3 or 4 equal portions.
  6. Roll each portion into a circle, about 6-8 inches in diameter.
  7. Fill each circle with the filling mixture on one half.
  8. Seal the calzones and pinch the edges tightly.
  9. Brush the tops with olive oil.
  10. Bake for 15-20 minutes until golden brown.
  11. Cool for a few minutes, then serve with dipping sauce.
