Jamaican Rasta Pasta

A vibrant and creamy pasta dish infused with jerk seasoning and colorful bell peppers, bringing the spirit of Jamaica to your table.

  • 1 box penne pasta
  • 1/2 red bell pepper, diced
  • 1/2 yellow bell pepper, diced
  • 1/2 green bell pepper, diced
  • 1 tsp minced garlic
  • 4 cups water
  • 1 tbsp salt
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 tbsp all-purpose flour
  • 2 1/2 cups heavy whipping cream
  • 1 cup Mexican-style four cheese
  • 1/2 cup mozzarella cheese
  • 2 tbsp wet jerk seasoning
  • 1 tsp dry jerk seasoning
  • 1 tsp seasoning salt
  • Salt and pepper (to taste)

Instructions

  1. Boil the pasta: Bring 4 cups of water to a rolling boil in a large pot. Once boiling, add 1 tablespoon of salt and penne pasta. Cook according to package instructions (about 8-10 minutes).
  2. Sauté the veggies: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add diced bell peppers and minced garlic, sautéing for 3-4 minutes until tender.
  3. Make the roux: Add 2 tablespoons of butter to the skillet. Once melted, sprinkle over 1 tablespoon of all-purpose flour, stirring continuously for 2 minutes until a paste forms.
  4. Pour in the cream: Gradually whisk in 2 1/2 cups of heavy whipping cream, stirring continuously. Bring to a gentle simmer and reduce heat to low when bubbles appear.
  5. Add cheeses and seasoning: Stir in Mexican-style four cheese and mozzarella, followed by wet jerk seasoning, dry jerk seasoning, and seasoning salt. Mix well until cheeses melt.
  6. Combine pasta and sauce: Drain the pasta (do NOT rinse) and add it to the skillet with the sauce. Toss until well-coated, adding pasta water if the sauce is too thick.
  7. Final touches: Cook everything together for another minute to heat through.
  8. Serve: Plate the pasta and garnish with chopped parsley or cilantro and extra cheese if desired. Enjoy with crusty bread!

Notes

This dish is versatile; add proteins like chicken or shrimp for meat lovers, or load it with more veggies for a vegetarian twist. Adjust the spice level as desired with more jerk seasoning.
