Homemade Rainbow Sherbet

A refreshing and colorful homemade rainbow sherbet that brings back childhood summer memories.

Ingredients

  • 3 cups fresh fruits (strawberries, oranges, and limes)
  • 1 ½ cups sugar
  • 2 cups milk or dairy-free alternative
  • 2 teaspoons vanilla extract
  • Pinch of salt

Instructions

  1. Prepare the fruits. Rinse, hull, and slice the strawberries. Peel and segment the oranges, making sure to remove any seeds. Juice the limes.
  2. Blend the strawberry layer by combining strawberries, ½ cup of sugar, 1 cup of milk, and a pinch of salt in a blender until smooth.
  3. Chill the strawberry mixture in a shallow dish in the freezer for about 120 minutes, until it starts to firm up.
  4. Repeat with the orange sherbet: blend orange segments, ½ cup of sugar, 1 cup of milk, and a pinch of salt, then chill.
  5. Blend the lime sherbet using lime juice, ½ cup of sugar, 1 cup of milk, and a pinch of salt, then chill.
  6. Layer the chilled mixtures starting with the strawberry layer, then the orange, and finally the lime, leveling each layer.
  7. Final freeze the dish covered for 240-360 minutes or overnight.
  8. Scoop and serve into bowls or cones.

Notes

Serve in clear dishes to showcase the colors; garnish with mint or sprinkles for added flair.
