High Protein Cottage Cheese Mushroom Soup

A comforting and protein-packed mushroom soup featuring creamy cottage cheese, perfect for a hearty meal.

  • 2 tablespoons Olive Oil
  • 1 medium Onion, diced
  • 3 cloves Garlic, minced
  • 8 ounces Mushrooms, sliced
  • 4 cups Vegetable Broth
  • 1 cup Cottage Cheese
  • 1 teaspoon Thyme, dried
  • Salt and Pepper, to taste
  • Parsley, for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  2. Add the minced garlic and stir for another minute.
  3. Toss in the sliced mushrooms and a pinch of salt, sautéing for 8-10 minutes.
  4. Pour the vegetable broth into the pot and bring to a gentle simmer for about 10 minutes.
  5. Blend the cottage cheese with a ladle full of the soup until creamy.
  6. Stir the blended cottage cheese back into the pot. Add thyme and season with salt and pepper.
  7. Simmer for an additional 5 minutes, stirring occasionally.
  8. Serve the soup in bowls and garnish with fresh parsley.

Notes

This soup can be customized by adding extra veggies or cheese. Perfect paired with crusty bread.
