Herb and Cheddar Squash Bread

A flavorful and nostalgic herb and cheddar squash bread, perfect for brunch or as a snack.

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 tsp dried herbs (oregano, rosemary recommended)
  • 2 green onions (diced)
  • 1 cup shredded cheddar
  • 2 eggs
  • 1/4 cup olive oil
  • 1/2 cup milk
  • 1 cup shredded squash or zucchini

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare your baking dish by greasing a 9×5-inch loaf pan.
  3. In a large mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, black pepper, and dried herbs.
  4. In a separate bowl, combine the wet ingredients: beaten eggs, olive oil, and milk.
  5. Stir in the shredded squash/zucchini and diced green onions into the wet mixture.
  6. Combine the wet and dry ingredients, mixing gently with a spatula.
  7. Add in the shredded cheddar and fold it in gently.
  8. Transfer the batter into the prepared loaf pan.
  9. Bake for 40-45 minutes until golden brown.
  10. Cool before slicing for about 10-15 minutes.

Notes

This bread pairs well with olive oil and balsamic vinegar for dipping or herbed butter.
