Pineapple Chicken Kabobs

A delicious blend of succulent chicken, sweet pineapple, and vibrant vegetables grilled to perfection for a tropical delight.

Ingredients

  • 1 lb Chicken Breast, cubed
  • 1 cup Pineapple Chunks
  • 1 cup Bell Peppers, cubed (mix of red, yellow, green)
  • 1 cup Red Onion, cubed
  • 1/4 cup Soy Sauce
  • 2 tbsp Honey
  • 1 tbsp Ginger, minced
  • 2 cloves Garlic, minced
  • Salt and Pepper, to taste
  • Skewers, soaked in water if wooden

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together soy sauce, honey, minced ginger, and minced garlic.
  2. Marinate the Chicken: Cube your chicken breast into 1-inch pieces and toss them into the marinade for at least 30 minutes.
  3. Prepare the Vegetables: Wash and chop your bell peppers and red onion into similar sized 1-inch cubes.
  4. Assemble the Kabobs: Thread the ingredients onto the skewers in an alternating pattern of chicken, pineapple, bell pepper, and onion.
  5. Grill It Up: Preheat your grill to medium-high heat and cook the kabobs for about 12-15 minutes, turning every 3-4 minutes.
  6. Finishing Touch: Remove kabobs from the grill and let them rest before serving; drizzle with extra honey or sprinkle with sesame seeds if desired.
