Savory Sweet Potato Shepherd’s Pie

A comforting twist on traditional shepherd’s pie featuring sweet potatoes, ground turkey, and colorful veggies.

  • 1 lb Ground Turkey
  • 2 Carrots, diced
  • 1 cup Peas (frozen or fresh)
  • 1 cup Corn (frozen or fresh)
  • 2 large Sweet Potatoes
  • 2 tbsp Olive Oil or Butter
  • Salt, to taste
  • Pepper, to taste
  • 1 tsp Thyme (fresh or dried)
  • 1 tsp Rosemary (fresh or dried)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the sweet potatoes by peeling and chopping them into chunks. Boil until fork-tender (15-20 minutes).
  3. Sauté the diced carrots in olive oil or butter for about 5 minutes. Add peas and corn, cooking for another 3-4 minutes.
  4. Cook the ground turkey in the skillet until browned, about 5-7 minutes.
  5. Season the turkey with salt, pepper, thyme, and rosemary, mixing well.
  6. Mash the sweet potatoes with butter or olive oil until smooth, and season with salt and pepper.
  7. Assemble the pie by spreading the turkey mixture in a baking dish, topping it with sweet potato mash.
  8. Bake for 25-30 minutes until the top is golden.
  9. Serve after letting it sit for a few minutes.

Notes

Can be made ahead and stored in the fridge. Taste even better the next day!
