Halloween Jack-O’-Lantern Peppers

A fun twist on stuffed peppers that celebrate Halloween with vibrant orange bell peppers carved into Jack-O’-Lanterns and filled with a hearty mix of rice, beans, corn, and cheese.

  • 4 orange bell peppers
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup shredded cheese
  • 1 teaspoon taco seasoning
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the peppers by slicing the top off each pepper and scooping out the seeds and membranes.
  3. Make the filling by combining the cooked rice, black beans, corn, shredded cheese, taco seasoning, and salt and pepper in a bowl.
  4. Stuff the peppers with the filling, packing it in carefully.
  5. Drizzle olive oil over the peppers before roasting.
  6. Get roasting by covering the baking dish with foil and roasting for about 30 minutes, then remove the foil and roast for an additional 10-15 minutes.
  7. Ready to serve, let them cool slightly before placing them on a platter.

Notes

These peppers are a great way to make a regular meal feel special and festive. You can prepare the filling a day ahead and store it in the fridge for quick baking later.
